HOW TO MAKE SWAHILI COFFEE



Coffee is a popular beverage all around the world. It is a brewed drink prepared from roasted coffee beans. When coffee berries turn from green to bright red then they are ready to be picked, dried and processed.

The coffee grown in Kenya is of the Arabica type, it is well known for its intense flavor and pleasant aroma with notes of cocoa. This kind of coffee is high grade and one of the most sought after coffees in the world.

 Coffee is very popular in the Coastal town of Mombasa, Kenya. Despite the regions hot climate, residents, mostly men, are fond of spending their evenings at barazas sipping hot coffee and playing backgammon. Residents of Mombasa believe that coffee is an aphrodisiac, this is the main reason why the culture is passed down to generations.

 There are two types of coffees brewed in Mombasa, kahawa Tungu and Kahawa Tamu. Both of these coffees are brewed using the Swahili recipe because the Swahili culture is dominant at the Coastal city.

Kahawa Tungu/ Bitter Coffee

  • Ingredients
  1. 3 cups of water
  2. 2 teaspoons of coffee
  3. 1 teaspoon of powdered ginger
  4. 1/4 teaspoon of powdered cinnamon
  5. 1/4 teaspoon of powdered cardamom
  6. 2-4 pieces of cloves

Add all the ingredients in a tall brass kettle and put over a charcoal stove, popularly known as jiko, and let the mixture boil for 10-15 minutes. Sieve and serve together with dates or halwa, which helps balance off the taste.

Kahawa Tamu/ Sweet Coffee
  • Ingredients
  1. 3 cups of water
  2. 1/4 cup of sugar
  3. 1 teaspoon of powdered ginger
  4. 1/4 teaspoon of powdered cinnamon
  5. 1/4 teaspoon of powdered cardamom
  6. 2 pieces of cloves
  7. 2 teaspoons coffee
Add all the ingredients in a tall brass kettle then put over a jiko. Let the mixture boil for around 10 minutes then sieve and serve with mahamri.
Coffee in Mombasa is usually served in small cups going for Kshs. 20 per cup. The brass kettles are reminiscent of the Arabs who settled along the Kenyan Coastline. 
These are simple recipes that are guaranteed to make anyone a coffee enthusiast.
